Crozets are a beloved specialty from the Savoie region in the French Alps. This rustic, square-shaped buckwheat pasta is delicious on its own or baked in gratin (see our recipes). No wonder Savoie is called "the other land of pasta".
Bring salter water to a boil (1 liter for 100 grams of crozets), then pour the crozets. Cook 15-20 minutes. Stir while cooking. Remove from heat and drain. Mix with grated Gruyère or Beaufort cheese and butter or crème fraîche. You can also add in diced bacon. Bake in oven 15 minutes at 350ºF for a tasty gratin.
