The intensely aromatic black truffles are one of the most prized varieties of truffles. They cannot be cultivated and have to be picked up in woods by truffle seekers and dogs (or pigs) trained for this purpose. The beauty of truffles is that a very little quantity transforms the most simple dishes into gastronomic delights. Try a few slivers on scrambled eggs or risotto.
