This artisan duck foie gras with Champagne will add a refined French touch to any festive meal. Ideal for a party of three or four. Made in Quebec with free range moulard ducks farmed humanely and fed without antibiotics or growth hormones.
Refrigerate for at least three hours, then temper 15-20 minutes before opening the can to make it easier to unmold. Open both lids and gently push towards the widest part. Cut out 1 cm (1/3 inch) slices with a knife blade warmed up with hot water. Display on plates, sprinkle fleur de sel and ground pepper to taste. Serve with gingerbread or toasted bread. Onion confit, fruit jelly, fresh figs and pears are all great accompaniments. Pairs beautifully with Champagne, of course!
