If you want a foolproof recipe to make puffs, look no further. Pre-heat your oven to 210°C (410°F). Add 3 eggs and 10 cl (1/2 cup) of hot water to one pouch of Francine mix. Scoop up monds of dough, lay on a buttered baking tray, and bake for about 20 minutes. The mix contains no sugar, so you can use it for both savory and sweet puffs and it even comes with a pouch of pearl sugar to make chouquettes!
